Chicken Enchilada Dip

Well, I had some free tortilla chips from my shopping trip the other day, some enchilada sauce that I had frozen and the desire to have something new for dinner. With that, Chicken Enchilada Dip was born just minutes ago. I'm sampling it as we speak and I must say, "yum".

1 chicken breast, small dice
1/4 c. onion, small dice
1/2 package cream cheese, softened
1 small can or 1/2 large can of green enchilada sauce
1 cup shredded cheese (I used mozzarella)

1. Saute chicken and onion in frying pan with a little bit of olive oil.
2. In separate bowl mix, enchilada sauce, cream cheese, cheese and sauteed chicken and onions.
3. Heat in microwave until boiling or bake in baking dish at 350 until cheese is melty.
4. Serve warm with tortilla chips.

This sounds yummy and it is gluten free even better!!! I will have to make it.
